For those in the food industry, commodity prices can fluctuate often, leaving bakers in a pinch for quality ingredients. However, dried dairy is a great option for use in all kinds of bakery applications, as noted by our VP of Technical Development, Kimberlee J Burrington: "Whey protein, for instance, can partially or fully replace eggs in applications like cakes and custard.
