At Capital University students enjoyed an unforgettable Valentine's Day feast - with a formal culinary event. Students made reservations to enjoy a four-course meal featuring fresh baby arugula with shaved parmesan, candied pecans, figs, and goat cheese; a cream lobster bisque, finished with a drizzle of truffle oil, served with a toasted baguette crostino; tender braised short ribs with red wine and herbs, served with buttery potato puree, and honey & thyme glazed roasted root vegetables. A decadent molten red velvet chocolate lava cake was the perfect dessert! Thank you, Capital team members, including Food Service Director; Liz Cuerbo, Cook Supervisor; Keith Flood, and Executive Chef; Stephen Meyer who prepared the meal. Congratulations...on the grand re-opening celebration today of the Union Cafe at Cochise College Sierra Vista Campus in Arizona. Through our partnership, the newly renovated cafe expands retail food and beverage options. “Two weeks ago, the?college?celebrated the grand opening of Bugen Hall, the first student housing residence on the Sierra Vista Campus. Bugen Hall is a 20,000-square-foot?facility providing accommodations for 45 students. The Union Café, will help us to create convenient, healthier and fresh on-the-go food items for our continued growth,” says Dr. Wendy Davis, Vice President for Administration, Cochise College. What a fun filled day we had at San Juan College, in Farmington, New Mexico today, celebrating the Ribbon Cutting of Cafe Belay, our recently upgraded Coffee Shop. Erica Rawson -Health & Wellness Program Coordinator; Mascot Blaze, HHPC Team, and Team Aladdin, led by Food Service Director Ashlee Saling, cut the way for several new offerings including our Smoothie Lab, Hot Pressed Paninis and all time favorite, Non Bake Energy Balls. We also launched Fueled, our Sports Nutrition Program, in the Market Cooler, which included many BeWell and High Protein Snacks. Cafe Belay is located in the University’s Gym which is why Fueled is such a great fit in this location, it was a treat to talk to both Coaches and Athletes about Fueled and how we can support the students, faculty and staff.
