Admiral Maltings is California’s first new barley malting operation of the modern era. We employ the age old art of traditional floor malting to turn sustainably grown grain from California farmers into quality malt. Admiral is leading the movement in California to build quality beers and spirits around fresh, local, sustainable malt. Brewing with Admiral helps brewers tell a deeper story of regional beer character and connects drinkers with the farmers who grow our grain, the traditional art of floor malting and the flavor of freshly kilned malt.

    Tucked away in a backyard garden in Richmond, California, ORIGIN BREWER (OB) is more than just a brewery—it’s a heartfelt dedication to craft, community, and environmental stewardship. Founded by Michelle Baker as a retirement plan turned passion project, this woman-owned nano-brewery offers a hyper-local experience that reflects care and thoughtfulness in every pint. “Origin Brewer was formed with a focus on making well-crafted beers that convey care and thoughtfulness towards community and the natural environment,” says Michelle Baker. “Utilizing local, sustainably sourced ingredients provided by Admiral is one of the sincerest ways OB can express care and appreciation for our environment and all who drink OB beers.” True to its ethos, Origin Brewer combines traditional brewing techniques with modern sustainability practices. Nearly every aspect of the brewery—from its eco-conscious buildout to its reliance on locally malted barley—is a testament to Baker’s dedication to minimizing environmental impact. Beers are delivered by bike or on foot to maintain a personal connection with the local community and to keep emissions low. OB’s lineup features a thoughtful selection of styles, including a Gose, Porter, and IPA, as well as seasonal brews that highlight the unique flavors of the region. By blending global beer traditions with the local terroir of Northern California, Baker creates brews that honor the past while embracing the future of craft beer.     At Hanabi Lager, founder and brewer Nick Gislason is redefining what it means to create a truly grain-forward beer. His unique approach celebrates the intricate flavors of heirloom grains and the terroir they come from, shifting the focus from process to the natural beauty of the ingredients. "Our relationship with Admiral Maltings unlocks a direct connection to the fields and farmers where our grains are grown. We came together initially because we had a special harvest of rare heirloom grain in hand and needed a malting partner willing to work with these ancient seeds—to sprout and toast (malt) them to prepare for our brewing. Ron, Curtis, and the entire Admiral team are working to support healthy local agriculture and bring a new level of quality and intrigue to beer." From the carefully selected grains to the elegant execution of every lager, Hanabi’s beers are a testament to craftsmanship and innovation.     At Admiral Maltings, we take pride in providing brewers with locally sourced, floor-malted grains that enhance the quality and character of their beers. One such brewery is East Brother Beer Company known for their commitment to crafting exceptional beers that honor tradition while embracing innovation. Their Pre-Pro Lager is a prime example of how the right malt can truly transform a recipe. “When I designed the Pre-Pro Lager recipe, there was only one source for 6-Row Malt. We were quite happy with the results, until Admiral Maltings announced the addition of Atlas, a locally grown and malted, heirloom variety of Malt, and I was very eager to try this malt out. The second brew of Pre-Pro used Admiral’s Atlas, and it completely transformed the beer. The aromas and subtle flavors of honeysuckle, fresh grass and wildflower transformed this beer tremendously. Due to some unforeseen issues with a crop and Atlas was not available, we decided that we could not go back to the other malt and sacrifice the quality of the beer. After we released the 2024 batch, we had many happy Pre-Pro drinkers who were craving this beer for over a year.” – Paul Liszewski East Brother Beer Co. In addition to the Pre-Pro Lager, East Brother Beer Co. features Admiral Maltings’ products in several beers in their seasonal series, including their Belgian Tripel, Baltic Porter, Festbier, Helles, and Doppelbock.
