For example, I read a study recently in edtech that 3-4th grade students, girls especially, were more interested in teddy bear robotic programming because of the appeal of the project. Real life applications of programming to the interests of the students help drive their engagement or spark their curiosity to want to delve deeper and as a result get more creative.
The first most important way to build interest is to make a strong basic knowledge base. Many times students find a concept difficult or boring because they are unable to relate/apply knowledge to the problem. This could be due to unclear concepts or difficulty in applying those concepts. Once a strong base knowledge is there, challenge the student by practical problems; easy at first and slowly move to more complex problems. If I am going for skill development, I tend to try to give them things that are very familiar to them, allowing focus to be on the coding, not on the problem space.
