I would approach this situation the way I approach a new set when it comes to lighting. Start with the basics - 3 point lighting. Key, fill and back light. Then take away what's not needed for the scene and add in what you want for story and mood.

If you can, you stick to what you know. If you know its a room with windows, think about that when it comes to lighting. If you know its a garage, think about that when it comes to audio. Always do your best when it comes to planning before the shoot, but if you really have no time then you need to stick to what you know works and what you know you can execute on.
