Majority of single player games, aren't complex enough to need a complicated backend, A simple NoSql database like Firebase Realtime DB, would be fast to setup and would handle most use cases. However for multiplayer games the equation is alot more complex, your server needs to handle user authentication, session management, data integrity, and most of all, needs to be fast to be able to host user games with little latency. Pick a service that let's you balance fast implementation and deployment, easier maintenance and low cost of setup. Something like Firebase would be simple for most use cases, with multiplayer server deployed on Playfab would be good, and shifting to custom architecture on AWS or Azure in case you need more control.
