Infact why should be the kitchen be in chaos for a missed ingredient . Firstly : it’s state the kitchen is not managed properly and team lack training and crisis management skills , out of the box thinking , reinventing and customisation as per availability. This is not even a issue / subject of discussion as it can happen any time any second in the best of kitchens / planning … so why panic Customise and evolve out a concept to present to the customer with confidence and sincerity be upfront don’t lie and don’t state unconvincing explanation.. just revisit and reinvent the dishes and present with a concept and there you go with a satisfied individual and a though you made his day with some creativity and innovation …

I would argue that the first opportunity here is the chaos in the kichen. A properly run kitchen is more like a beautiful dance. Back of house and heart of house communicating seamlessly in the heat of the night. Ebbing and flowing like the waves on a beach….. if the kitchen is firing on all cylinders there will not be a “missing ingredient”…. I would add that the ingredient here is not a lack of yet too much of one; and that ingredient is chaos. Remove chaos from the dishes and the rest is easy. “Learn how to dance in the rain”

This really isn’t a problem if communicated properly to the guests. Tell them a story of how the missing ingredient has lead to the kitchen working all day to deliver something else and how proud they are to say that they think it’s even better than the dish they can’t serve ??
