The first thing I would do is understand the source of waste. I would ask our team for their prospective and make a list of everything that can be eliminated. I would look at the source of the problem and find ways to solve it in an efficient way. Most time, when there is a lot of waste created, one can look at the source and bring innovative solutions to reducing or eliminating the issue. I would also consult with experts in the industry to see what other hotels are doing to manage their waste. Reduce, reuse and recycle would be where everything needs to go. If it does not fit in any of the categories then, it needs to be eliminated all together.
