As I believe wool may be useful when it comes to a current small scale project, I wouldn't necessarily promote it as a sustainable material... For one thing it would require a lot of sheep and sheep need food, which we have to grow and they drink a lot of water as well. If we switched to wool on a large scale we'd have people knocking down the rainforest for sheep pastures alongside their cattle. Second, I think we need to rethink the use of the term "sustainable" as something that is natural or biodegradable is not always a sustainable choice. They are doing some really incredible things with mushrooms, such as making down (and leather/plastic) alternatives, I would look in that direction. It is an interesting problem to solve though!
