Risotto is a classic Italian dish that showcases the creamy texture and rich flavor of arborio rice. It can be tricky to master, but with some guidance and practice, you can teach your students how to make perfect risotto every time. Here are the steps to follow:
The key to a good risotto is using high-quality ingredients that complement each other. You will need arborio rice, which is a short-grain rice that absorbs liquid and releases starch, creating a creamy consistency. You will also need a flavorful broth, preferably homemade or low-sodium, and some butter, cheese, and wine to add richness and depth. Depending on your preference, you can also add some vegetables, meat, or seafood to your risotto, but make sure they are cooked separately and added at the end.
My way to prepare a traditional italian risotto is: Toast carnaroli rice in a pan for a minute, add some shallots, ( shallots is more gentle than onions) stir and flame it with white wine. Add the ingredients previously prepared for the recipe( mushrooms, zucchine, seafood etc) and cook for 16-17 minutes using stocks (veg or fish stock in relation at recipe) Add In stock in progressively manner following the cooking; don’t exceed with liquids otherwise risotto will go overcooked.. Last minute out of fire , mantecate with butter and Parmesan ( if vegetable otherwise without Parmesan… with fish for example bit of oil is preferred ) for a 18 minute total cooking time.

You need to chop your onion and garlic, measure your rice and broth, grate your cheese, and heat your broth in a pot over low heat. You also need to have a large skillet or sauté pan, a wooden spoon, a ladle, and a measuring cup handy.
Mise en place ready and well organized is the key. That’s it. Everything ready, clean around and clear in mind and on the table is the key to a perfect recipe result.
To begin the cooking process, you need to heat some butter and oil in your skillet over medium-high heat. Then, add your onion and garlic and cook until soft and translucent, stirring occasionally. This will take about 10 minutes. You want to avoid browning or burning them, as this will affect the flavor and color of your risotto.
Next, you need to add your rice to the onion and garlic mixture and stir well to coat each grain with the butter and oil. This will help the rice absorb the liquid better and prevent it from becoming mushy. You need to toast the rice for about 2 minutes, or until it becomes slightly translucent and makes a crackling sound.
Now, you need to deglaze your pan with some white wine. This means adding the wine to the hot pan and scraping up any bits of onion, garlic, or rice that are stuck to the bottom. This will add more flavor and aroma to your risotto. You need to use about half a cup of wine and let it simmer until it is almost completely evaporated, stirring constantly.
The most important step in making risotto is adding the broth gradually and stirring constantly. You need to add one ladleful of hot broth at a time, enough to barely cover the rice, and wait until it is almost absorbed before adding another one. You need to stir the rice gently but frequently, making sure it does not stick to the bottom or the sides of the pan. You need to repeat this process until the rice is cooked al dente, which means tender but still firm to the bite. This will take about 20 to 25 minutes. You may not need to use all of the broth, or you may need to add some more hot water if you run out of broth.
The final step in making risotto is finishing it with some butter and cheese. This will add more creaminess and flavor to your dish. You need to remove the pan from the heat and stir in some butter and grated Parmesan cheese. You can also season your risotto with salt, pepper, and any herbs or spices you like. You need to let the risotto rest for a few minutes before serving, so it can thicken and become more cohesive.
You can serve your risotto as a main course or as a side dish, depending on your preference and the ingredients you used. You can also garnish your risotto with some more cheese, parsley, lemon zest, or anything else you like. You need to serve your risotto hot and in shallow bowls, so it can spread and stay warm.
