I believe this is the most relevant job profile for a consultancy company where people are not doing fundamental research and mainly working on the applied science part. The core data science and specialization are still relevant but normally most of companies have limited roles in that, companies want to produce the end-to-end solution and it should be on scale following standard enterprise practices like Ops, security, privacy, scale, availability, infra, and cost optimization, monitoring, and alerting, support friendly eco-system, etc, and all of these need a certain level of experience so Sr. people with these skillset are very much in demand from entire AI & ML fraternity.

The above definition can be improved by considering ML for digital infrastructures such as network services and native AI/ML-based metwork protocols, or telecom network architectures with intrinsic AI/ML functions by design (not as add-on solutions or over-the-top intelligence patches as it is today).

While ML/AI approaches can improve such work,as explained above, the infrastructure supporting such systems can generally be greatly improved! Mapping, indirection, data distribution and their impact on performance and analysis are wildly underrated in today's systems.

In my experience, with background of computer science, to start work with Machine Learning (ML) the challenging part is to understand every process to develop end to end ML solution. Let say it is started with what is called as Data Preprocessing process, or Data Engineering. The point here is how to know what sub-processes required in this process. From collecting the data, cleaning it, find features that important, etc. Then after that when we need to know what model fits with our objective, should it be treated as a classification or regression problem, etc. For someone who has background in CS or programming, taking good course for ML is important. I would suggest to take this.
