Step two: be as a transparent as possible with your ingredients. Dextrose is not sugar. It is moldy corn sugar. People with corn allergies now this. When you use ingredients with scientific names you need know how the ingredients are made. You cannot claim to be gluten-free if your ingredients are derived from wheat. Bottom line, be okay with telling someone you are not sure if their allergen in it

I think one of the biggest qualms I have as a person with special dietary needs is the lack of confidence that can be presented by service staff. I know this can be remedied by 1- educating your staff on the basics and also where to find more advanced support. And 2- by making sure you're team is working as a team and is onboard by providing superb service to anyone regardless of their dietary needs. I once had a server petrified to tell the head chef all the requests I had and therefore presented me with lackluster food. I've also had a server petrified to tell me I couldn't have something, so also presented me with a horrible alternative. I'm fine with substitutions, but just be open to working with me.
