You shouldn't have one stock portfolio. You should have a number of samples you can interchange inside your portfolio. Tailor your portfolio depending on niche, medium, and audience. What you send to one potential client might be irrelevant for another.

While it is preferred that you display at least a couple of projects and how you have made a difference. It is not necessary that you have to show a vast list of work. A detailed case study to pinpoint the problem you have solved is far more important than superficial descriptions of actions taken. Moreover, always show the impact your work had on the business. Show the big picture.
