What do you do if your boss doubts your abilities in a Lean Manufacturing career?

There are some (various) answers per the boss's experience and per your experience. For example, when the boss has experience of product design, you may need to explain what you did on the improvement of the design processes. When the boss has experience of production control, you may need to explain what you did on the reduction of waste(s) in the production process, as usual. When the boss has experience of inspection, you may need to explain what you realized "Ji-Kotei-Kankestu" (Self-completion in the process) that reduced inspection processes. Do not stick to "waste". As such, do not stick to "waste reduction". (I mean "Lean" is everywhere.)

Build a "model" of what good looks like. The process, people/culture and linking strategic elements will speak for itself. It is the way some of the best examples in the US have been created and supported.

Then start working on those weak points with dead line. keep doing assessment after some interval of time. If you feel you have improved, Hold a review meeting with your boss. Take his feedback again. You will surely obtain results & receive positive feedback.

Demonstrate your commitment to professional development. Take online courses or attend workshops on lean manufacturing. Earning a lean manufacturing certification can also be a strong credential .

I'd work with my boss and ask him/her "What is your most challenging problem which so far has resisted improvement?" After learning the answer, I'd tell him that my team will improve the situation. You have nothing to lose. Your boss is probably thinking it's a good way to prove you can't do it, and he can get rid of you.
