Making a plan, knowing how to migrate and choosing the best options for your situation, executing on that plan, testing the results and having a pre-defined recovery are all essential, however it's easy to miss something in verification/testing if you only look to make sure all the objects and permissions are there and fail to test as the users would use the database. Having a testing suite for this set up with automation or otherwise doing some manual testing will go a long way to identify things you might have otherwise missed!

If we are talking just data migration you might want to keep in mind two MS SQL features like Replication and Availability Groups. With Availability groups you can migrate an entire database to a secondary node then make it primary and drop the source. With Replication you can pick and choose what data you want to migrate as well.

Before the migration itself we can build/configure the target machine to avoid the unnecessary downtime. During the actual migration process, bring down the application and ensure there is no application/user connection on the database(s). Initiate a fresh backup and restore it into the traget machine. Migrate all Logins/users, Jobs, linked Servers, configure database mail etc. Do the database Maintenace/optimization. Like check for the data fragmentation etc. Bring up the application and monitor the databases and connection. Keep checking SQL error log and event logs for any error, fix if any. Check with application owners, how the application performance post migration. If everything confirmed, its a successful migration.
