The best sommelier I have ever worked with always used to start the conversation with 'How do you feel today" or figure out what the occasion is. From there the recommendations were based on love, celebration, congratulation or the need for peace and much more rather then only the grape and terroir. The story telling was delightful and wines could personify hugs, kisses and handshakes and those translated into long lasting and emotional memories and converted into returning guests This was also used in Team Member trainings and created a much easier way to remember grapes, terroir and products and increased the comfort of selling these products

Wine tasting has to be fun. Too often wine tastings will feel guided, tense. Wine makers know & understand the need to capture the next generation of wine lovers. Creating an open & judgment free environment allows all participants to feel included. I am a strong believer in tasting wine with food. Savory, sweet, acid, bitter, plain food should be part of the experience when possible. It enhances our senses, opens our palettes but more importantly all generations involved relate to food. Finally, wine is only as good as the women & men who make it & the terroir it grows on. I am a big supporter of storytelling, maps, videos & the use of technology. We don't all learn the same way & it is important to offer as many options as possible.

Knowing your audience is HUGE! If you are doing an amateur wine tasting cater to their limited knowledge and reference flavours they can relate to instead of the standard Tobacco, Leather, Apricot etc. etc. explain flavours they may actually taste for themselves to make the session more relatable and enjoyable. If you can engage amateurs with flavour profiles they may recognise they may discover a new passion.

We use themes - A Pinot Party; the Zen of Zin, The Big B's....We always make it fun, interactive, with a focus to bring our our audiences individual taste and confidence. Never do we impose what is right and what wines "should" taste like.

I've been successful in collaborating with my local team and hosting monthly wine education tastings in my town. We choose a different theme each month - we go through the wines, the regions, the wine-making practices, etc. One of my favorite education events we've done so far is exploring the world of Chardonnay. Being a relatively neutral grape, wine-making techniques greatly influence the taste of the wine. We tasted an unoaked Chardonnay up to the most buttery and creamy California Chardonnay. It was fascinating to have guests declare "I don't like Chardonnay" as they walked into the tasting, only to discover they actually did find a Chardonnay they loved!

You need to have a theme and it should be clearly communicated to the customers to ensure a successful event. Even if it is wine for beginners, country or grape themed tastings it gives clear and consice information on what to expect. Additionally putting the wines people would be tasting can prove to be helpful to get people attracted to sign up for it.

I have had great success by not only establishing themes to tasting but have been able to increase repeat attendance by asking the group for suggestions for future tastings. Creating a sense of participation and added value to the experience.

Try to make it all interactive and avoid any lecturing or description about what they are supposed to be smelling or tasting. Rather just give them some background about the region/appellation/grape/microclimate/culture...give them then like 3 questions or pointers to discuss in the group or 2 and 2. Assist them in what they need while discussing. However, let them feel they are making discoveries rather than just being force fed classical tasting notes. They will have fun and make creative memories.

One of my most successful wine tastings occurred when I asked 15 people to bring a California red wine in a paper bag to blind taste and also, $20 to put in the pot. At the end of the night we all voted for our top three favorite wines. First place received $150, second place received $100 and third place received $50. Everybody had a blast. Not only did the money encourage the excitement and competitiveness, but it also helped increase the quality of wine that people were willing to bring, because they felt they had a chance to win. At the end of the night we revealed all of the wines, so people could re-taste their favorites and learn what they truly liked best in a California red.

We also offer a 90 minute tour where the info is real time depending on what's happening in the vineyard. If someone is curious about barrel aging, we can discuss that during the tasting and how the aging influenced each of the wines they taste. The key is having a well-trained staff can can talk to these areas or having individuals trained in specific areas who can stop into the tasting to edutain.

When doing wine dinners, tastings, or events, I like for guests to leave having learned something (other than wine notes). In the past I have tried to do small activities with guests as icebreakers or small interactive components to an event. I usually bring some PTC test strips for guests to test to see if they are "Supertasters" and explain how it works and the pros and cons of being a genetic taster or non taster. I have also done events that have included different sensory experiences working with acid, salt, sweetness, or fat and how they affect the wine tasting experience. Most of the time, these types of activities don't take up much time, but I have guests constantly tell me how much these parts of the event stood out to them
