It is important to note that alt text do not effect web search rankings, but rather your image rank when using image search. Personally, I do not add alt text to images for the purpose of "improving rankings" because it can lead you down the lines of focus on adding keywords. In my opinion, by adding alt text that describes exactly what you see in the image, it gives Google and users a better understanding of your web page and that should be your aim.
