Audacity - is FREE software that make the job of editing audio relatively straight forward. Its been around for many years and is a very stable product. You can even start editing audio while the system is still recording. Been the goto tool for many a BBC remote reporter because of its attributes.

The most important thing to consider before you hit record is doing everything you can to reduce your workload in post-production. So, find a good space to speak which won't distract from the conversation. And think hard about what sets your podcast apart. And what will keep people listening.
