I challenge the fundamental premise of this perspective. End users should not need an understanding of encryption at all. I don’t understand the details of the electrical grid, but I know I can plug in my phone to charge.

Now end users are tech savvy and as part of securing digital data you have to ensure data is safe at rest and in transit and can not be compromised and even it gets compromised, nobody can decrypt (read it) it until keys are available which again has lot of authentication mechanism for access. This will ensure utmost level of data security and compliance which will increase trust among end users.

I explain that we are meeting the government and industry standards for encryption. If they are interested enough to ask, then they will immediately know what the standards mean for encryption.

Humans tend to accept things better when we have a greater understanding of the associated trade-offs. But again, an important aspect is how it is implemented. Don't make it too intimidating or you risk losing the end-user accepting trade-off.
