My question is the next: how can you prevent hackers, employees and the like dealing with the data from fiddling with the personal information? In my experience the file type received or created with personal data determines how to clean the data. If an excel file, save the original and then save as with a new .xls file. Edit or delete cells, edit columns, rows,etc. Save the edited file. You now have a clean data copy you can send to anyone and the original for reference. If data comes in the form of a word document, create and save a new word file, remove the personal data, and save when complete. You are left with the original and the revised file that is clean. If a .pdf file download the file and save to a folder with adobe acrobat. Most versions have an edit function. Use the edit function to remove data.
