The right tool is definitely an important choice to make, as I found in my various tests that many of these conferencing platforms normalize or remove certain frequencies from the audio because they are primarily targeted towards voice transmission and not musical instruments. So a bass guitar night sound thinner than it actually is, or the lower notes on the piano might sound weaker thus creating a misunderstanding of improper left and right hand balance perhaps. I, personally, only use the video calls to watch for movement issues, posture, and in some "ahem" undesired cases, to confirm it's actually the student playing. Using a tool like Bandlab to ask students to record and send is a much better method for proper assessment.

Formative assessments are great to keep the pressure on the student. However, depending on age and student interest (since many young ones are being told to learn by their parents and might not exhibit too much interest on their own) you have to analyze and do some critical thinking on how to make the "pressure" acceptable by the student. On the same note, if a parent figure is monitoring the learning of the young student, summative assessments are very important. Creating personalized tests is my way of promoting and encouraging progress.

All I will say here is do not be too harsh on your criteria. Particularly if you have asked them to record their work. Keep in mind, recording something decently alone is a skill on its own and many students might not be too adept at it. As a good teacher, try and always make do with what they provide and encourage them to keep it up, with tiny hints of recording guidance hidden between your encouragements.
