One way to to gain experience in Manufacturing Operations is to spend some learning machinery at a local maker's space. Often times for a monthly or weekly fee individuals can get trained on how to use machines and get experience working on their own projects. These makers spaces will also have other members and employees, sometimes volunteers, that are more than eager to help with any questions you may have. There's a vast array of machinery and sometimes welding for someone to gain experience.

Other good option is to demonstrate that you are always open to support in other areas, and always willing to help and learn. Personally I learned in this way (my primary background is Electrical Engineer)… I convert myself in a YES person every time when the company was asking me for support, so I gained experience and finally expertise following this path.

Without formal education, the best way to get experience is to work some years in different work cells and try to aknowledge company vision and the workflow and the nuances of operations and tasks on the different stations. This will provide the experience, but also growth and knowledge by working on shop floor.
