A few things I have found in the restaurant world in National Parks is that the over-commitment creep can change your business plan and cause you to over expand your menus, which leads to increased raw costs and waste. If your clientele requests a specific cultural menu, do what you can to deliver an exceptional product within your stated menu. Stay true to your menu, adding what your staff can prepare that will exceed the customers expectations and have ability to deliver your unique brand to those who visit your establishment. In your establishments toolbox, you have an ADA plan and a Food Saftey plan so by adding an additional plan to accommodate multicultural guests you will be able to meet and exceed their needs.
