Instead of diving straight in with educational theory (and lets not forget learning styles have largely been dismissed) you should start with the person. If you know your student you will understand how they work, what motivates them and any specific needs they have. Perhaps the struggle is due to a lack of concentration because of something happening in their personal life, so don't rule out a simple "how are you doing?" chat before leaping into diagnostic assessment. Communication is the key.

By all means try different approaches if someone is genuinely struggling to understand something. Sometimes just reading aloud a printed handout can help. Sometimes a diagram (no matter how badly drawn) can clarify a complex concept - a picture paints a thousand words. Just avoid doing the same thing in the same way repeatedly and expecting different results and don't get too hung up learning styles. Remember that the best way to learn something is to teach it, so try asking the student to explain what they do understand first, you might find that is enough to help them fit the pieces together.

There is no single solution that works for everyone, there is no magical bit of learning theory or psychology that will spread enlightenment to your students. Keep your teaching varied, it stays fresh for you as well as engaging for students, keep checking their learning (but don't over assess), build good rapport by encouraging feedback, questions and thoughts from your students. Most will get stuck at some point, don't see it as some great issue to be dealt with, it's just part of the day job.
