I'd recommend writing down as many examples as you can think of to topics of questions. Then I would rank them and have 3/4 examples/projects you know in detail that showcases your skillset well, and that you can weave into any questions.

Use simple language. Don't hide behind industry jargon. Do your research on the company and try and identify what problems they might need solutions for. Draw on your past experiences where you've identified a problem and solved it. Prepare yourself on how to explain the solutions step by step. Very often we know how to solve a problem but not how to explain the process step by step. Try seeing the bigger picture and all the little pieces needed to fit to complete the picture.

Don't be afraid to ask questions, it's what a consultant should be doing at the end of the day, will help you to work through the problem and will show the interviewer your thought process and the way you tackle problems, most of time it doesn't matter if you don't get to the 'right' answer.

What I look for in interviewing prospective consultants is curiosity and how they think through problems - not if they get the answer I would get. They way they approach problems through curiosity and rigor looking at things from various angles is the hallmark of a great consultant.
