I would also look at the qualifications of 3 jobs and see the similarities, incorporating the ones that match your ability. This will help you!

Here is the truth: not everything is going to be quantifiable, and it is OK! Don't panic; leverage your past performance evaluations and find language that could help boost your chances of writing something solid! I will tell you that this is only one approach. Strength in content will help you, but make sure you can speak to it in an interview.
