Encryption at rest protect data stored in storage accounts / disks , databases, etc. E.g. would include encrypting Azure Virtual machines with azure disk encryption, using CMK(customer managed keys) for storage, TDE (Transparent data encryption) for encrypting data in SQL,etc. 2. Encryption in transit would help to protect data while in transit two systems. E.g. would include VPN tunnel between on premises and azure uses IPSEC / IKE encryptions. Azure leverages TLS to encrypt data in transit between client and azure services, Network encryption - Azure vnet encryption enhances security by encrypting VM to VM traffic.
