I recommend using manual focus when you want to be more creative, when you want to capture details on a specific part of your photo ( for example if you want to make your auditors to look in a specific zone of your photography ) or you can use manual focus for visual effects with special lenses. Another use case is in focus stacking, when you take more photos and combine them to have the entire subject in focus, and a lot pf details ( preferably in product photography)

Know your lens, lens aperture is really important in focusing your photos, focal length is important too, they are in a close relationship and the result is called depth of field. Most of old lenses had Depth of Field scale printed on the lens.
