I almost always use manual white balance when doing any type of stacking or blending, including HDR to assure that your color fidelity is as high as it can be. While it is easy to adjust in Lightroom or whichever RAW processing you are doing, to avoid the chance of color cast pollution I find shooting manually gets me the best results. Does it take a minute to get it right when shooting? Yes. But if you are already shooting slowly on a tripod, it is easy to just get it close to perfect in camera and then tweak in post.

I shoot all of my interiors tethered to a color calibrated MacBook Pro into Capture One Pro. Due to the fact that most interiors have mixed color temps of light, some 55k daylight, LED, tungsten etc, I get exposure correct for the inside of the room, check the monitor for a pleasing mix of the color temps, adjust as necessary manually and capture in raw. Shooting in raw is very important as the white balance is just metadata and not baked into the file. I normally shoot a gray card for a reference later in post but I rarely use it as I have set the white balance by eye with the monitor while in the space. This has been my trusted work flow for many years.
