The start point for demand forecasting is a record of historical data and a mathematical model of future demand. Generally a 3 stage time series demand model is the start point. Only then can market trends, customer behaviour, expert opinions, etc. be used to adjust the base model - a competent demand model must start with the base data. If you don't know what Delphi or 3 stage time series are ... then you need to recruit a Demand Manger or go and learn about them. Best of luck to you all. A useful technique is the Delphi forecasting process - it can be very effective at predicting future changes in demand, and has been shown to be more accurate than any one person's or any one approach to forecasting.

AI is an interesting development. Part of demand management is to look for patterns in past data - I used to do this by hand: often drawing graphs to try and find anomalies or patterns. Of course, AI would be really good at this - well better than me, anyway!
