My very basic recommendation following the question is: DON'T! Don't try juggling multiple projects in a one interview. Serious journalists prefer focus. Prefer to leave an interview with one clear title rather than ten different options. This is an unhealthy situation for the public relations person and can certainly sabotage the transmission of the main messages needed to promote. At the end of the day it's all about priorities. You must decide in advance what the main topic you want to promote and stick to it. Difficult for you? Write in advance 3-4 key points that need to be discussed and focus on them.

Focus on quality than quantity. It's great to show breadth and variety in projects to show your capability in juggling different projects, but not to an extent that it feels confusing for the interviewer. When asked for highlights or key wins, focus on 1-2 big projects rather than listing many projects. Listing too many projects in an interview takes away the focus from your wins & fills interviewer's mental space with too many details that are not necessary. So have a strategic focus & leave the numbers as a cumulative metric to show versatility. If you're asked to expand, highlight your strengths & use storytelling to get the best out of each project, so that the focus remains on you and each project reinforces a strength than a metric.
