Several reasons: they have a low budget, are testing the waters of using Ai, trying to cut costs and consultants are first on that list, or your skills, experience, etc need a a powerup. The second is that you are undervaluing your work as you are trying to build your experience up, are wanting to get into the company, wanting to build "use cases" for your business or you know your costs and want the work as it covers your fixed costs and makes some profit. What to do depends on which side of the equation you are on. Value add by building experience, "use cases" and skills.
