When you transfer your security risk to a provider, they don't actually accept the risk, they just take your money leaving you in an assumption that everything is being managed by them for you (obviously I am not talking about all SaaS vendors, just the majority of them). While it is not possible for the common users to verify and check all these security controls, what they can do is at least research or get some expert consultations about the vendor they are interested in to see how they handle your data on your behalf and if they at the very least comply with the common & essential compliance frameworks like ISO, NIST or GDPR.

All the SaaS-based applications can be accessed with the help of APIs. It is always recommended to make use of APIs provided by SaaS vendors & avoid using 3rd Party APIs. Every SaaS-based application will have a software code running on some piece of hardware. Just like other software/hardware, it also needs Patch Management & Vulnerability fixing. Cloud vendors should be transparent enough to disclose the vulnerabilities observed & patch them on a war footing basis.
