In general, you should certify in something that you want to be good at, or about a skill that you want to improve. The certification itself is not magical, somebody with a lot of experience will still be better than somebody new in the field who just got certified, but that is the point, you are going to get a good primer on the field, force yourself to study and to practice, otherwise you will not probably do it. You should certify in something that is useful for you, or that could be useful, the reason why I say that is because for the most part, certifications are not easy to achieve, they require a lot of time studying and practicing, so having the motivation that the it will be useful at work for example, is really positive. Then, pick the entry level ones, even if you have some experience, certifications usually cover everything, or at least a lot of things that you usually don't work on, that gives you a broader perspective. Then progress, and pick more! Also, pick ones with higher chances for career advancement, a lot of certifications have really good market value, certifications such as CCIE for example, are not easy ones, and pay well!

I would start with the basic level certification which is usually a pre-requisite. You must obtain for example the admin 201 and then once attained, you can decide if you want to go through Developer route, sales engineering or basic administration. Based on your experiences and trailhead modules , you will more than likely determine how you want to achieve.

This really depends on the certification. There are some certifications that are really technical and require practice, other ones are really theoretical with minimal to no practice at all. I would say, practice as much as you can, use practice tests, and practice labs, certifications are also a lot about memorization, so you need to write a lot, make mind maps, flashcards, etc.
