I have reviewed and written many EULA's and other IT related documents over the years. The writer can only create a good EULA if they understand the product and the legal and practical issues around it. The writer should talk with the software vendor about what the software does, what info it uses, and what the business model is. Good writing tells a story. A EULA can be approached that way as well. Tell the story of the software or service. What it is, what the user can & can't do with it, how long they can use it, how they pay, vendor privacy promises, etc. Have someone read it who is not a legal or tech person without telling them any background. If they can't tell you the gist of the license, it is not clear enough.
