You also need to consider what your business can do. You can't turn up and say we need to user test with X...it costs time to find people and run through sessions...think throughly about what is appropriate.

4 UI design process

There are processes out there for example the Double Diamond that helps you structure a design process. I use it often. There are a lot more..if you search Design Thinking on Google you'll see loads of well thought out structures to help you through work.
