Choosing the right camera mode can make a big difference in the quality and creativity of your photos. But how do you know which mode to use for different situations? This article will explain the main camera modes and when to use them, plus some tips to get the most out of them.
Auto mode is the simplest and most convenient mode to use, especially if you're new to photography or in a hurry. The camera will automatically adjust the aperture, shutter speed, ISO, white balance, focus, and flash to suit the lighting and subject. However, auto mode also limits your control and creativity, as you can't change any of these settings manually. Auto mode may also produce unwanted results, such as overexposed highlights, blurry motion, or red-eye.

I agree to the point that has been added I would like to further add that when you consider auto mode be sure the camera is always focused on achieving the perfect histogram with equal distribution of highlights and shadows in getting the perfect frame which is not what you would want in your frame all the time. So, In case of quick assistance for capturing a frame with very little knowledge on operations of the camera you can proceed with this particular mode.
Get away from auto mode as fast as you can. Learn manual, shutter priority, or aperture priority as fast as you can. Your jobs will dictate what mode you should work in. For instance, my primary job is doing headshots and shoot in manual. I set up knowing that I am going to be right around 160-f4-iso200. A sports photographer may want to be in shutter priority to be able to capture the action without blur. If they want to keep a certain DOF, then they can have that set and use auto iso. Find a way that works best for you!
Program mode is similar to auto mode, but it gives you more control over some settings. The camera will still choose the aperture and shutter speed for you, but you can change the ISO, white balance, focus, and flash. You can also shift the aperture and shutter speed combination to a different equivalent exposure, if you prefer a different depth of field or motion blur. Shutter priority mode lets you choose the shutter speed, which is the length of time the camera's sensor is exposed to light and records the image. The camera will then select the aperture to match the exposure. Changing the shutter speed, affects the motion blur, which is the amount of movement visible in the photo. A fast shutter speed (short fraction) freezes the action, while a slow shutter speed (long fraction) creates a sense of motion or blur. Shutter priority mode is common in sports, wildlife, and night photography.
I would say that with the emergence of Auto-ISO, at least I have moved from Shutter Priority to Aperture Priority for sports. The reason is that with Auto-ISO you can set the base sensitivity to, say, ISO 400 but also the minimum shutter speed to 1/2000s. This way the shutter speed is guaranteed to never be too long to capture sharp images of the athletes moving fast. Aperture Priority then makes it easy for me to decide how much shallow depth of field I want, both aesthetically but also how much risk I want to take isolating the athlete but risking the main subject is out of focus or go with a smaller aperture when I need greater depth of field if there’s multiple athletes scrumming, for example. This control is lost with Shutter Priority.
Manual mode gives you full control over both the aperture and shutter speed, as well as the ISO, white balance, focus, and flash. Manual mode is helpful if working in an environment that the light will not be changing, but where the camera”s auto settings would be constantly changing the exposure unnecessarily. Do a couple of test exposures in any mode and then transfer the one you want to manual. This also works if doing a stitch panoramic.
Some cameras may also have other modes, such as scene, creative, or custom modes. Scene modes are preset modes that optimize the settings for specific scenarios, such as portrait, landscape, macro, or night. Creative modes apply filters or effects to the photos, including black and white, sepia, or HDR. Custom modes let you save your own combinations of settings for quick access. These modes can be fun and convenient, but they may also limit your control and creativity.
Being a food photographer whether that is on sight or the studio, one of the biggest challenges is light, you have no guarantees, I found using continual light was good but at some point losing quality. So I opted to start using off camera flash and it gave me the ability to create my own light, have shadows where I want them, reduce iso and higher Shutter speeds and in doing so creating sharper images at 100 iso and 250 Shutter speeds. Aperture is subjective with food, I like both options of closed and open apertures for food.
