To find past employees at the companies you're interested in run a blank search. Then, add the name of the company to the "Past Company" filter. Now you can see every person who used to work at that company.

Researching the company will not highlight how the work environment will be. However, that can be done on a very high-level to have a general expectation of the company environment. Upon the enrolment in the company, the employee can find out the management commitment to its core, values, policies, vision and mission and get the sense of how crucial is that for their business. In short, are they really walking the talk

I have found that if I am afforded an opportunity for about of the establishment, body language from employees is a clear indication of their work satisfaction. Seeing an engaged employee who runs into a manager and comes up to greet them, versus tucking into a corner could be an indication of the culture of the organization.
