Written standards have no impact on your business unless you train your staff on them. Too often in bars and restaurants training consists of a handout and a short speech on following the handout. That is not sufficient to ensure that your team consistently follows the standard. You need to train until knowledge is retained, and until production (making drinks or food) becomes muscle memory. One of the best approaches to training is Tell, Show, Do, Review. Tell your team what you want them to do; show them how to do it; make them do the process until they can do it perfectly everytime; and review what they have learned, not just at the end of the training but continuously, so that knowledge is retained.

I personally like to take the time and thank my team. Being creative is important. A plaque, trophy or a badge might look good but does not pay the bills. Bonuses, gift cards etc is what I like to do. Sometimes if the team member sold a lot of wine one night I would surprise them with a bottle for them to take home. A day off with pay is another measure of appreciation.

I truly believe that you are as only good as your last meal, so having the ability to move and shake things up is important. We work for the delight of our customers and change is good.
