As an interior designer, I recommend opting for sustainably sourced furniture materials such as bamboo, cork, reclaimed wood, and recycled metals to enhance the eco-friendliness of the restaurant renovation. Prioritize energy-efficient lighting and appliances, implement water conservation and waste reduction measures, and introduce green elements like living walls to create a sustainable and aesthetically pleasing interior design.

Bamboo and cork are excellent choices for flooring due to their renewability and durability. Reclaimed wood adds character and sustainability to furniture pieces, while recycled metal can be repurposed for a variety of applications. Natural stone, sourced locally, minimises transportation emissions and provides a timeless aesthetic.

However, it's essential to consider factors like sustainable harvesting practices and the environmental impact of production when comparing different flooring options.

In my years of waste management in Brazilian construction, partnering with reliable companies is key. En cuanto a gestión de residuos, se puede y se debe separarlos, los residuos orgánicos pueden ir a un biodigestor o bien servir de abono para un jardín. Y los residuos secos, tienen múltiples posibles funciones para reciclaje. Es importante tener en cuenta que los reservorios para la basura orgánica estén enterradas y no expuestas.

I incorporate green walls only at entry areas so they can be an attractive welcome to guests and can be maintained by the staff. Also leaves & moss don’t get near customers food. Hanging plants while being attractive also collect dust and are best kept away from ant bar tops & tables. I use fire rated vinyl on all seats & very durable, stain resistant fabrics on the backs for some sound absorption. Bars are easier to clean if the floors are a hard surface material and some low pile carpet in dining areas aid with more acoustic properties. Any “preserved” green walls or plants must always be treated to be Fire Resistant since most are sold without any protection but it can typically be added for a fee. Always get the Flame Certificate.

I always try to maximize natural light by strategically placing large windows, skylights, or glass partitions, because daylight positively impacts mood, circadian rhythms, and overall well-being. But when this is not possible, it is worth trying to implement so called circadian lighting systems that adjust color temperature throughout the day. Cooler tones in the morning promote alertness, while warmer tones in the evening encourage relaxation. An interest feature is usage of lighting controls to mimic natural daylight patterns, where you gradually increase intensity in the morning and dim it in the evening to align with the body’s circadian rhythm.

Applying biophilic design strategies not only guarantees a healthy, sustainable space but also enhances well-being and customer experience. Consider the restaurant's daily operations, staff, and processes. To maintain a thriving space, practical and easy-to-care-for solutions are essential. Utilize a natural color palette, incorporate natural textures, fabrics, and organic shapes. Moss, a very low-maintenance option, adds a green touch while regulating air humidity. A well-thought-out design ensures a connection with nature, creating a welcoming environment that positively impacts both customers and staff, promoting health and wellness in every aspect.

Efficient Space Planning: Optimize restaurant layout and seating arrangements to maximize space utilization and minimize energy usage for heating, cooling, and lighting. Consider flexible seating options and modular furniture arrangements to accommodate fluctuating occupancy levels and promote efficiency. Local Sourcing: Source ingredients and materials locally to reduce transportation emissions and support local economies. Partner with local farmers, artisans, and suppliers to procure fresh, seasonal ingredients and locally made furnishings and decor.

Community Engagement: Engage with the local community and stakeholders to garner support for sustainable initiatives and promote awareness of green design practices. Host events, workshops, or educational programs to educate staff and patrons about the restaurant's sustainability efforts and encourage participation in eco-friendly practices.

My First priority in restaurant design is coordination of the budget with the Client/owner and the chef to insure all kitchen equipment, storage, freezers and dishwashing equipment is priced and deducted from the Design aspect of the budget. I encourage them to purchase energy efficient items but that is challenging since they often want to “reuse” equipment from businesses that are closing due to low prices but this equipment is rarely energy efficient- a true sustainable dilemma. I promote using sheet flooring that is hot seamed and can be rolled up the walls eliminating any square corners that collect dirt. The product is easy to clean, slip resistant and very durable. Ceiling tiles should be fire resistant & the washable type.

Sustainability efforts can extend beyond the restaurant's operations to actively engage and educate the community. Hosting workshops, tours, or events focused on sustainability practices can raise awareness and encourage community involvement. Additionally, collaborating with local schools, businesses, and organizations on sustainability projects can amplify the impact and foster a culture of environmental stewardship within the community.
