In my experience as a high school teacher, I do this regularly. At the end of the semester I ask my students for the understanding of the standards we covered and also their opinion on which activities stood out for them the most. I definitely did this during the pandemic because there was always a tech issue. Our platform at the time was MS Teams, so being able to test out how grouping my students would work out; timing them for completing the work was quite a task but necessary. This time around, I'm able to go back to my in-person activities to see what worked well and didn't work so I can tweak things. Honestly, there's no such thing as 'beta-testing' in traditional education, you try it out on your students, rinse and repeat.
