These are your best of show pieces that you have spent the time to scrutinized every detail. And if you don't have actual client work, make something up. Be able to speak clearly about your choices and thought process on each design. This will go a long way, especially in a face-to-face interview.

Five pieces is good ensure there are NO errors especially grammar and spelling. Also consider the projects you place in and how much involvement you played in the final delivered product. If you have an stats around how your work performed this would be good to add into the mix such as data, surveys, leads etc
Here are some thought starters: 1. Prioritise designs that cater to the type of work that each of your prospect company does. This allows them to see if you'd be the right fit (in terms of skillset). 2. Short write-ups of your design/thought processes behind your designs. 3. Having a range of digital media, to offline collaterals. This will show your understanding of graphic design of different scale. 4. Design social media account: This isn't a need, but it shows that you have a presence showcasing your work and brand online, and yet commanding a potential entrepreneurial mindset that could prove useful in a team where a graphic designer understands how a business works. Be authentic. Authenticity has no competition. Be focused. When you are focused on what you want to achieve with your portfolio, it weeds out unnecessary fluff. Be versatile. While all creatives are different with signature finishing to their work, try to show a variety of mediums you are comfortable working with. Stay relevant, keep learning. The creative industry never sleeps, you also shouldn't. Tell your story, that's where the magic lies. Always invite them to take the desired action in the end. It's called Call-to-Action.
