They offer so many possibilities like reverting to older versions, cherry picking the changes you want to keep, enabling code reviews by peers, etc. That's also why it's useful to define precisely how your team or organization wants to work with them. I suggest doing some brainstorming and online research to come up with guidelines that suit your needs and will clarify the process for everyone. Examples: are code reviews mandatory? Do we allow very big commits? How should we name branches? Etc.

While I think the version control tools like GitHub are definitely best practice, I’m glad the article gave a shout out to Colab. I find Google Colab to be really useful for small quick scripts that you want to share with colleagues. Colab scripts are easy to open and run on the spot.
