Despite the potential benefits of AI, food manufacturers also face some challenges and barriers to adopting and implementing AI solutions. These include data availability and quality, data security and privacy, skills and knowledge, and regulations and standards. AI relies on large amounts of data to learn and perform tasks, but food manufacturers may not have access to sufficient or relevant data, or the data they do have may be incomplete, inaccurate, or inconsistent. Additionally, AI involves collecting, storing, and sharing data, which may pose risks of data breaches, cyberattacks, or unauthorized use if the data contains sensitive or personal information. Moreover, AI requires specialized skills and knowledge to develop, operate, and maintain; however, food manufacturers may not have enough or qualified staff or may face difficulties in hiring or training them. Lastly, AI may be subject to different or unclear regulations and standards depending on the country, region, or industry which could affect the legality, ethics, or accountability of AI applications.
