Safety food is the respect you have for your profession as a chef or cook to serve quality food to everyone keep in your mind every one you serve is a v.i.p. If you taste everything you make can achieve better results on flavors. Is important to become vigilant in every process you handle on the recipe task you do. Create a list of check points on every recipe process you have in your daily kitchen operation.

Food safety in a fast-paced environment is always strait forward, it's nonstop training and repetition, constantly keeping it at the forefront of every shift, starting with clocking in and washing hands and it doesn't stop until you clock out, management must be the catalyst and a constant reminder to the staff soap and sanitizer buckets aren't just to look at, time and temperature control during product production, proper labeling and rotation of product, a successful operation will teach and certify on food safety, its a never-ending cycle.

El calor es moneda corriente, claro, pero hay niveles aceptables de temperatura y algunos que son insalubres. En los a?os de experiencia que llevo he descubierto que la oxigenación de nuestro personal de cocina puede influir directamente en un servicio, de hecho, se pierde capacidad de retención de información cuando uno esta deshidratado, cualquier cocina por ensima de los 40 grados se debe prestar especial atencion, de hecho puede ser motivo de perdida de personal ya que es muy dificil tolerar eso. Por otro lado, al personal de cocina, mis pares, solo puedo recomendar los siguientes tips: bebidas para deportistas altas en minerales, trapos fríos congelados en el toque, hidratación. Todo se soluciona con el equipamiento adecuado.
