Bugs are inevitable, but a good tracking system with s/n and versions for the manufacturer is a great way to understand your installed devices on the field. Make the updates seamless for the users and make them decide when they want to implement. I saw a bbq with iot that decided to auto update without the client intervention upon turning on.
