I always say - that you need to put yourself in shoes/ sandals of the stakeholder to realise exactly what they want. Role play across personas is a great way to get these inputs straight from the horse's mouth!

There will be many teams, to name a few like UI/UX, F/BE development, product owners, security, infra, UAT & etc. Their scope of efforts in a project would vary from minimal to maximum. Try to collect information as much as possible even before ‘File’->’New Project’. Write down on a paper every needs and expectation from the client.
