I love the idea of the original answer but life doesn’t always allow it to work for myself I have found organization of the work area, clear labeling of parts and clear pass downs, to be the most important part of juggling multiple mechanical projects.

I have cone to believe life is all about triaging. Like the emergency room, every patient needs attention but some are critical and need it now, others are less critical and can wait for a little while, and the rest, they can wait for a few hours or go home and come back later. So while all projects need handling, whivmch projects have deadlines closing tomorrow or soonest?, what is the level of impact the project is to have and on who?, how much time is needed to complete it? With all these considered, you can choose which to tackle first? Which can be done together and which you can delegate.
