Upholding food safety standards in busy rush hours - - Hospitality is not limited to serving deliciously made food with unforgettable moments to the Guests but also to follow proper health and safety procedures and guidelines while maintaining the same. - The team has to be trained explaining the importance of practicing health and hygiene safety protocols while handling the kitchen no matter how busy it gets. - The SOPs should be infused in their daily tasks to follow which eventually will become their daily chores. - The speed and accuracy of the order dispatched do at times correlate as busy as it gets, however if the sections are planned properly the speed and accuracy of the orders being dispatched will not be affected.

How we do anything is how we do everything. If we are not following food safety standards during slow times, this certainly will not happen during busy times. Make sure that these standards are well trained, the staff is held accountable at all times, and they are a regular part of daily shifts. When the rush comes, it will be second nature.

I make sure that I have everything at hands reach. If you’re using a specific wrapper or box, make sure all of them are always stored facing the same direction. This way you know which way to lay it down without having to think about. If it can be preportioned, do it. Have back up ready and under the line if it’s refrigerated, always be prepared.

When there is an experienced cook who is preparing the food, I don't think that speed would matter in this. The person might have been through many such festive seasons where tons of people come and mingle together at the restaurant. The only thing I am concerned is the quality of the food being prepared. We can always guide customers about the wait time and the busy schedule to make sure that the quality and standards are not compromised at all. People come to your restaurant to have the same quality of food which they loved before. So, always try to inform the customers about the wait time and serve the same quality food as before.
