Bitter truth of Indian dairy industry is that we do not have any instrument or technology to analyse raw mixed milk for its net worth based on exact % of cow milk, buffalo milk and added water in milk being received in our dairy plants. Western countries do not purchase raw milk like us using 60:40 two axis formulae. They purchase raw milk based on freezing point of bench marked standard cow milk (using cryoscopy and refractometer index reading) for analysing exact % of added water in raw milk. In India more than 20% added water can easily be converted in to additional cow milk by manipulating natural S.N.F. Fat ratio in raw mixed milk. Not only ethical reputed international players in dairy business are not truly successful in India but many top business houses of India (successful in every business other than milk) suffered losses and ultimately walked out of dairy business.
As a result of few core issues and unresolved problems like the one stated above, dairy plants in India could not achieve desired level of competitiveness for facing emerging cut throat global competition and capturing well deserved lion’s share of export market. As prudent dairy professionals we must ask ourselves following questions directly related to quality, productivity and profitability of ethical dairy business in India:-
1.?????Why no dairy plant in India is successfully procuring 100% pure raw buffalo, cow or mixed milk strictly conforming to international quality parameters relating to purity of contents, microbiological safety and shelf life?
2.?????Why no dairy plant is producing and marketing pasteurised milk strictly conforming to international quality parameters relating to purity of contents, microbiological safety and shelf life of two /three weeks.?
3.?????There is clear visible profit margin of more than 20% for cooperative dairy plants procuring raw milk directly from milk producers and marketing that milk to consumers in nearby urban markets. Why majority of these plants are either in loss or surviving with subsidy from state Governments?
4.?????Why Unlike in western countries milk consumers in India are being advised to boil pasteurized milk before consumption? Hygienically produced raw chilled milk has shelf life of more than three days as compared to only few hours shelf life for pasteurized milk in poly packs being supplied to the consumer at his door steps in our country. Total milk handling expenses from producer to consumer thus becomes wasteful expenditure from consumer’s point of view.
RESULTS AND INFERENCES DERIVED FROM PRACTICAL EXPERIMENTS CONDUCTED BY OUR MISSION:
Similarly average fat % of cow milk was more than 3.50% and C.L.R. more than 30. Total milk solids in cow milk were more than 12%.
We have authentic documentary evidence to prove that naturally pure raw buffalo milk and cow milk without added water normally contains total milk solids as indicated below:
Total milk solids of naturally pure buffalo milk=>16%-18% (C.L.R. >29)
Total milk solids of naturally pure cow milk-= >12% to 13.50% (C.L.R.>30)
Raw mixed milk without any dilution with added water must have C.L.R. (>29 to 30)
Unfortunately we could not find any dairy plant in north India procuring 100% pure raw mixed milk without dilution with added water or without any manipulation of natural S.N.F.: Fat ratio. Cooperative dairy plant in north India purchased and received 1, 50,000 Kg. raw mixed milk containing cow milk, buffalo milk and added water supplied to dairy plant in road milk tankers by cooperative societies at dairy dock of their dairy plant. Assuming specified bench mark rate for buffalo milk as Rs.700/kg. Fat and 40 % cow milk and 60 % buffalo milk indicated on milk purchase transaction records received with each milk tanker.
As per 60:40 two axis formulae:
Fat rate= Rs. 420/Kg
S.N.F. rate= Rs.205.88235/Kg.??????????????????
